
Last night before I met my friends for some cocktails I made myself a quick healthy dinner. It was under 10 minutes prep time and super easy.
Halibut with Roasted Tomatoes and Spinach
Get:
1 fillet halibut
Roma, cherry or plum tomatoes
1 large garlic clove
1 large shallot
1 lemon
1-3 fresh basil leaves
olive oil
salt, lemon pepper, paprika
Start
When you get home from work pre heat your oven to 450. If you're using very small tomatoes like grape or cherry leave them whole, but if you are using a larger tomato like Roma tomatoes (as I did) cut each tomato into fourths. You can also use large vine ripened tomatoes and halve them instead but roasting larger tomatoes can take up to three hours and by then I would likely eat my hand or my weight in olives.
Put the tomatoes in a baking dish then add minced garlic and basil. Sprinkle salt and pepper to taste then drizzle with olive oil. Place them in the oven (for around 20 minutes) and begin the fish preparation.
Cut up the shallot and saute in a frying pan with a teensy bit of olive oil for about two minutes and in the meantime:
Rub a tiny bit of olive oil over your fillet-you don't need much since the tomatoes already have olive oil on them. Sprinkle with salt, lemon pepper, and paprika or any other seasonings you enjoy. Grate a little lemon zest over the top to taste. Take the shallots off of heat and place on top of the halibut fillet.
Place the fish in a baking dish or on foil and place in the oven and cook for about 10 minutes. Pierce with a fork and if it goes in and out easily with no resistance that means it's ready...if it doesn't easily come in and out that means it's probably hitting raw fish so you should leave it in the oven (probably about 10 minutes)
When the tomatoes are done take a handful of spinach and mix so the spinach wilts. Put spinach and tomato mixture on a plate and top with the halibut and you're all set!

Dinner was especially nice since I brought home the bright sunflower and gerber daisies the bf sent to my work this week :)
This meal perfectly reflects my cooking philosophy. I love making healthy meals using whole ingredients that have lots of flavor. This was my first time making this and I definitely will be again!
